Our Sourcing
Pastry
At dawn every day our bakers produce hand crafted breads and pastries to fill our café windows. At the heart of our process is aeration, thickening, and keeping ingredients cool. These techniques help add depth of flavor, lightness and flakiness, and a freshness that can be tasted. Each of our bakes are created through hard work and love, using the highest quality ingredients.
Coffee
Calypso offers both traditional and blended roasts that come from exceptional beans produced exclusively by regenerative organic agriculture. This helps to ensure the survival of our soils while creating income stability for farming communities. Choose from drip or espresso products and enjoy a cup overlooking the Pacific Ocean, or take it to go. We offer delicious offer that you can feel good about drinking.
Food
We devote ourselves to sourcing organic, wholesome ingredients to create food that tastes good and makes you feel good. We collaborate with 12 farms, dairies and ranches to source sustainable, natural ingredients; from lavender, honey, and yogurt to local greens and produce, to fish and poultry our menus brim with the nuances of our coastal region.
